1. Ingredients for making Simple Khagineh | Persian Sugar Omelet:

* If you want, it is possible to use Grape juice instead of sugar, But the amount is different from sugar and, it is 2 to 3 tablespoons.

Recipe for making Simple Persian Sugar Omelet:

The first step in making Simple Persian Sugar Omelet:

In the first step, choose a suitable bowl to make a simple khagineh. Then break the eggs in it, add the yogurt, and stir well until the ingredients are completely uniform. Then, add one tablespoon of baking powder to the bowl along with the flour and mix the contents of the bowl well again.

The second step in making Simple Persian Sugar Omelet:

In the next step, please choose a suitable frying pan, pour some oil, and place it on the stove until it gets hot.
It is better to use a flame spreader. Then, after the oil is hot, reduce the heat very much and pour the contents of the bowl into the pan.

The third step in making Simple Persian Sugar Omelet:

Then put the pan in the oven and give the khagineh 20 minutes until one side is completely fried, then turn it over so that the other side gets also fried.

To prepare khagineh syrup, choose a pot and add two cups of water to it, as well as 2 cups of sugar and a tablespoon of melted saffron, then put the pot on the gas stove with low heat until the sugar dissolves completely in the water and it thickens a bit.

The fourth step in making Simple Persian Sugar Omelet:

After the other side of the khagineh is fried, take it out of the pan and cut it as desired, and after the khagineh syrup cools down, pour it on the khagineh and eat it.

2. Ingredients for making Khagineh Tabrizi | tabrizi khagineh (ghighanakh):

Egg3 pcs
Yogurt1 tablespoon
Flour1 tablespoon
Baking powder Ā½ a teaspoon
VanillaĀ¼ a teaspoon
Chopped Walnuts6 pcs
Sugar2 cups
Rose waterĀ½ a cup
Melted or brewed saffronAs much as needed
Cardamom powder1 tablespoon
Cinnamon powder1 tablespoon
Damask rose powder1 tablespoon

Recipe for making Simple Persian Sugar Omelet:

To prepare Tabrizi khagineh, choose a suitable bowl and break the eggs in it, then add vanilla and mix well until completely mixed.
Then add the sweet yogurt to the bowl, flour, and baking powder and mix well until it is completely uniform.
If the concentration of the egg is low, add some more flour to it. Its concentration should be less than the concentration of ferni.

In the next step, choose a pan, add some oil, and put it on the low heat until it gets hot.
Then add the khagineh to the pan, spread it in the pan, wait until one side is fried, and turn it over so the other side gets also fried well.
After the khagine is fried, put the pan lid and wait 10 minutes until the khagineh softens and can be rolled easily.

In the next step, sprinkle cardamom powder, cinnamon powder, and Damask rose powder on the khagineh. 

Then put chopped walnuts in the middle and roll. Use a toothpick to hold the roll.

To prepare khagineh syrup:

  1. Choose a pot and add two cups of water to it.
  2. Put 2 cups of sugar and a tablespoon of melted saffron with rose water in a pot on a gas stove with low heat until the sugar dissolves completely in the water and thickens a bit.
  3. Take it off the stove and let it cool.

Finally, pour the syrup on the rolled khagineh and eat it. You can cut the rolls into equal numbers with a knife to make them more beautiful.

3. Ingredients for making Khagine with nuts (Cake like Khagineh):

Flour5 tablespoons
Egg4 pcs
Sweet and dnsed yogurt (creamy yogurt or condensed yogurt)4 tablespoons
Baking powder1 teaspoon
vanillaĀ¼ teaspoon

Ingredients for making Khagine with nuts (Cake like Khagineh) syrup:

Sugara cup
WaterĀ¾ a cup
Rose waterĀ¼ a cup
Brewed saffronAs much as needed

Ingredients for making the middle part:

Cinnamon powder1 tablespoon
Damask rose powder1 tablespoon
Chopped WalnutsĀ½ a cup

Mix water and sugar and put it on medium heat until the sugar dissolves and the syrup becomes clear.
Then add rose water and saffron and reduce the heat and let it boil a little and reach a relative consistency.

Mix the eggs and vanilla and beat with a mixer until foamy and light in color, and mix yogurt and baking powder together; When the yogurt is puffed up, add it to the eggs and mix until smooth.

I add the flour and grease the inside of the pan a little with oil and put it on the heat until it gets hot.
We pour half of the khagine ingredients into the pan and leave it in the pan until it catches itself a little.

We remove the pan and pour the mixed middle ingredients on the khagine (try to spread the ingredients evenly) and then pour the next half of the khagineh ingredients on the middle ingredients.
We put Khagina in syrup to sweeten it.
