Sabzi Polo Ba Mahi is a special and important Persian dish served on Nowruz. Nowruz is the Persian new year, and it is the first day of spring, around the third week of March. Persian People celebrate the beginning of the new year and serve various traditional dishes such as Reshteh Polo, Sabzi Polo, and Kuku Sabzi.

How to make Sabzi Polo Ba Mahi

First, put the fish pieces in a suitable bowl; add the chopped onion, grated garlic, and lemon juice to the bowl along with the spices (salt, black pepper, and turmeric) .mix the ingredients well till the fish is seasoned.

Soak the rice for an hour. Fill a suitable pot with 7 cups of water and put it on high heat. After boiling, rinse the rice and pour it into the boiling water.

When the rice has slightly softened, add chopped herbs to the pot and stir them gently, after 3 minutes, drain the rice and herbs in a colander and rinse the rice with cold water and set it aside.

Pour some oil into the pot and put it on low heat. You can use sliced potato or LavashBread as Tahdig. Pour the rice and herb mixture into the pot; You can pour a small amount of brewed saffron on top of the rice; this will make your rice more colorful and give it a better flavour. Pour 1/2 cup of water and some oil. Cover the pot and put it on medium heat for 5 minutes, and reduce the heat for 30 minutes until it steams.

To sautƩ the fish fillets, place a large frying pan on medium heat, Then pour oil in it and let the oil get hot, then Put the fish fillets in the oil, and after one side is fried, turn the fish over so that the other side is also fried.

How to serve Sabzi Polo Ba Mahi

After the Sabzi Polo is completely cooked, mix it in the pot until they are uniform, then serve it on a platter. Garnish your rice with making golden rice by mixing brewed saffron and rice and Tahdig. You can Put fish pieces beside the rice.
