Sabzi Khordan & Naan-o Paneer-o Sabzi, The Ultimate Revelation Of Sabzi Khordan
Sabzi Khordan is considered as salad besides most of the dishes in Iran. Sabzi means herbs and khordan means eating. As you herbs is healthy and highly suggested by doctors and coaches to have it on your diet. Sabzi Khordan includes herbs spearmint, basil, cilantro, flat-leaf parsley, tarragon, dill, chives, marjoram. Each of these fresh herbs has their own special properties. You may only mix these herb leaves and serve it along with a great Iranian main course such as Koofteh Tabrizi, Mirza Ghasemi, etc. Or serve it as Naan-o Paneer-o. Naan-o Paneer-o Sabzi:
As I told you A traditional breakfast, or even afternoon snack, is the Persian Naan-o Paneer-o Sabzi which is a humble meal and a simple combination of briny cheese, fresh herbs, walnuts and flatbread. Also you can add slices of tomato and cucumber to this easy cuisine.
Naan-o Paneer-o Sabzi ingredients:
|Feta cheese||8 ounces|
|bunch Basil(Persian basil or sweet Italian basil, lemon basil or Thai basil)||1 bunch|
|Flat bread (Lavash or Sangak)||as needed|
Wash and drain the herbs completely. Trim the stems, but leave them intact. Place the herbs on a large platter. Put your radishes(cut into quarter) beside them.
Then place the feta cheese in the middle of the platter. Another option is pouring a little olive oil on the top of feta cheese. Finally a sprinkle of sesames will make the cheese marvelous.
You may want to soak your walnut. Pick bowl pour water and a little saltin it. Leave it for 24 hours then drain it. But this step is up to you. Then place the walnuts with warm color on the platter. Tomato and cucumber will make your platter complete with a cup of warm tea with sugar.
In Iran serve date and raisins beside Naan-o Paneer-o Sabzi to add a little sweetness to this dish. one way for serving Naan-o Paneer-o Sabzi is making a roll of all the ingredients. Pick a flat bread (it’s better to use Lavash) spread a thick layer of cheese on it. then put the leaves of the herbs. also ground walnut. finally roll the bread.

You may want to serve Sabzi Khordan as a Salad which taste amazingly delicious. In this way, the only thing you should do is washing and draining the herbs then cut their leaves and put the leaves in a basket or bowl. Pouring olive oil all over your herbs is optional but add more properities to your Sabzi Khordan. If you want to make it a complete Salad, add cubes of feta cheese,too. Actually in Iran, They just use the leaves of the herbs along main course but you can be more creative.
