Morasa polo, called Persian jeweled rice due to its beauty, is one of the most delicious food that you can serve it in your parties. Actually this Persian dish is from Qazvin City. Cooking Morasa polo may take a while but is so easy and When you face the result, you’ll be surprised because it doesn’t only look stunning enough to make your guests jaws drop but it tastes heavenly too!!!

Morasa Polo ingredients:

chicken breast 3 pounds
basmati rice12 cups

Cut your chicken breasts into cubes and add three cups of water along with one sliced onion. Let this cook on medium high heat for about 30 to 35 minutes.

Tahdig means the bottom of the pot. To make Tahdig, you may either slices of flat bread or potatoes. Pour 2 or 3 tablespoons of vegetable oil into your pot.

When it starts to sizzle add your potato slices. Each potatoes slice should be about half centimeter to 1 centimeter in thickness. If you don’t prefer to use potatoes, you may use any kind of flat breads such as Persian Lavash bread or Matzoh bread, using tortilla is another option. By the end of the cooking process potatoes will become crunchy, crispy and golden. There’s never enough Tahdig for everyone, so your guests will fight over it.

Next add your semi-cooked drained rice on top of the potatoes and let it steam for 20 to 25 minutes on medium low heat. Before putting the lid on, add half cup of water to prevent the rice from becoming too dry in the steaming process. And make a few holes with the back of your spoon to improve the steaming process.

Final steps of Morasa Polo

Once your chicken is almost cooked, it’s time to season it. Add 1 teaspoon of turmeric powder, half a teaspoon of paprika and 1 teaspoon of sea salt. You can add additional spices such as pepper.

After your chicken breast are completely cooked, turn off the heat and at the same time your rice should be ready too.

For the final touch, add a few tablespoons of ghee for extra flavor. you can also use butter or if you are on diet٫ skip this part.

How to serve Morasa Polo

At last you must make some saffron rice by combining one fourth of cup liquid saffron with one and half cups of your cooked rice.
