Sib Polo

Sib Polo (Persian Potato and Rice) is one of the delicious dishes that belong to the west of Iran, with a unique taste.

Ingredients for making Sib Polo:

Rice2 cups
Potato1 large piece
Dried dill2 tablespoons
Brewed saffron2 tablespoons
Liquid oilAs it needed
Salt and black pepperAs it needed

How to make Persian Potato and Rice:

The first step:

To prepare sib polo, we first soak the rice in lukewarm water and some salt for 30 to 2 hours, depending on the type. Meanwhile, peel the potato, then cut it into cubes.

At this step, we put the chopped potatoes in cold water for a few minutes to remove the excess starch on the potatoes. Next, we put a suitable pot on the heat and filled it halfway with water.

The second step:

After the water reaches the boiling point, add 1 tablespoon of salt and 1 tablespoon of liquid oil to the boiling water, then add the soaked rice to the pot. We also rinse the potatoes and add them to the pot.

We wait for about 5 to 10 minutes until the rice softens, then rinse the rice and potatoes. Next, we put the pot we planned to cook Sib polo on lambent heat and added a little oil.

The third step:

At this step, we use sliced potatoes or lavash bread for the bottom of the pot, and after placing them as Tahdig, add the rice and potato mixture to the pot, then make a hole in the middle of the rice with the spatula handle.

Next, pour one or two spoons of liquid oil and the brewed saffron on the rice and close the pot lid.

The fourth step:

Now, we increase the heat under the pot a little so that the steam wraps inside the pot; then, we reduce the heat. It takes about 45 minutes to an hour to steam the rice. Besides rice, we can use many different options. According to our taste, we can use chicken stew, beef stew, etc.
