How to cook Khoresht Mast (Beef Yogurt Dessert):
The first step:
To prepare delicious Khoresht Mast, first, place the neck meat in a suitable pot, then remove the onion skin and wash it well. Next, we divide the onion into 2 parts and put it in the pot.
Now add some turmeric to the pot, then add enough water to cover the meat. Next, we put the pot on low heat, then let the meat cook completely for 3 hours.
The second step:
At this stage, after this time has passed, we remove the meat from the pot, then remove the bones and shred the meat very thinly.
Next, we pour the meat into a suitable pot.
Now we beat the meat with a masher until the meat becomes white and elastic. Next, pour the yogurt into a suitable pot, then put the pot on a gentle heat and add some sugar to it.
The third step:
At this step, stir the yogurt continuously until it boils. When the yogurt boils, add the meat to it and stir continuously until the meat and yogurt are combined and uniform.
Now we chop the walnut kernels into small gems, then pour them into the Khoresht Mast along with almond slices and brewed saffron.
Next, we pour some salt and rose water into the Khoresht Mast, then mix.
The fourth step:
Finally, when the Khoresht Mast becomes thick and stretchy, we take it off the heat, then pour it into the dish we want.
In the end, we pour some slivered pistachio and barberry on it as a decoration, then serve it cold. Enjoy your meal.
