Kabuli pulao or Qabli pulao is a dish from Afghnistan. This dish is prepared from rice with meat and different spices and has a wonderful taste. Sugar2 Tbsp
Garam masala1/2 tsp
Ground cardamom1/4 tsp

How to make Kabuli Pulao

Step 1- Preparing the meat

1-You need boneless lamb meat to prepare kabuli pulao. Wash the meat and cut it into 2 cm cubes. Peel the onions and chop them finely. Pour 2 tablespoons of oil into the pan, and when it is hot, add the onion. Let the onion fry and turn golden; then add the meat.

2-Let the meat change color slightly. Next, add spices, including black pepper, cardamom, cinnamon, and gram masala, to the meat and Stir them. Then add one and a half cups of water to the pan and cover it until the meat cooks well and becomes soft. At the last quarter of the meat cooking, add salt and stir.

Step 2-Preparing the slices

3-Wash the carrots and cut them into thin slices. Pour some oil into a frying pan and fry the almond slices until it changes color. Remove the almond slices from the pan, put the carrot slices in the pan, and fry a little. Then add the soaked raisins to the carrot and stir. Next, add 2 spoons of sugar to the carrot and raisin mixture and fry.

Step 3- Cooking the rice

The next step in preparing kabuli pulao is cooking the rice. Soak the rice for about an hour before cooking. Pour water into a pot and put it on the flame to boil. After boiling the water, add some salt and the rice to it. Let the rice boil a little, remove stiffness, drain it, and set aside.

Step 4- Combine rice and ingredients

Take a suitable pot and pour half of the drained rice into it. Pour the cooked lamb over the rice. Pour the other half of the rice over the lamb and add the carrot and almond slices at the end. Do not throw away the broth. Pour some of it on the rice and close the pot lid. You can use a paper towel over the pot. Put it on medium heat and reduce the flame after 5 minutes. 30 to 40 minutes is enough time to steam the rice.

Topping and serving Kabuli Pulao

Transfer the Kabuli Pulai to a serving platter, place the remaining lamb on top of the rice, and garnish it with fried almonds, carrots, and raisins.
