How to make Eggplants ready for Mirza Ghasemi
The first step for cooking Mirza Ghasemi is putting the eggplants in the oven at 180 degrees. Or you can barbecue them. Keep Broiling the eggplants until their peel can be easily off and fully burned.
Then let them become cold and peels the eggplants completely off.
Put the eggplants in a large bowl and mash them with a masher or use a blender.
After that, put the mashed eggplants aside, and letās prepare the tomatoes. Boil the tomatoes in a pot containing water for about 5 minutes. Drain the tomatoes and peels them off. Chop up the tomatoes into tiny pieces.
Put a pan on heat and add 2 to 3 tablespoons of vegetable oil. Grate the garlic cloves and fry them until they become soft. Add 3 teaspoons of turmeric powder. Turmeric powder gives a vibrant color to your dish.
Now add the mashed eggplants to the mixture and fry them for about 20 minutes. Next, add the chopped tomatoes and let it cook for 10 minutes. (The tomatoes juice must be steamed)
Itās up to you to add 1 tablespoon of tomato paste to your mixture. Actually, I recommend using it due to its color and fantastic flavor.
After adding tomato paste, Fry the mixture for a short while.
Gather all the mixture on one side of the pan, and break and pour the eggs onto the other side.
After 4 minutes, scramble all of them together. Finally, add 1 to 2 teaspoons of salt and 1 teaspoon of black pepper.
