Shirin polo, also commonly known as Persian wedding rice or Rosh Hashanah rice.
Shirin polo is one of the old and popular pilaf dishes in Iran, especially Shiraz; according to some sources, Shirin polo dish are also served in Azerbaijan too, and one of the colorful components of the table in wedding celebrations or large parties; which is made in different cities of the country with different recipes.
Its preparation is not more difficult than other rice dishes, but high-quality ingredients must be used. How to make Persian wedding rice
The first step:
To prepare this aristocratic Shirin Polo, first, put the chicken meat with 2 cups of water, 1 onion and some salt, black pepper and turmeric in a suitable pot and put it on high heat until the chicken is boiled. For the chicken meat to taste delicious, we let the chicken absorb the water in the pot completely. Now, we let the chicken meat cool down a little, then cut it into large pieces and set it aside.
The second step:
At this stage, we cut the carrots into large slices and fry them with some oil in a suitable pan until they are slightly fried; then, we add some turmeric and half of the sugar to the carrots so that the color of the carrots is shiny. Next, frying for a minute or two half of the brewed saffron and a slice of orange peel in a suitable pan, then remove the ingredients from the pan and set aside. Add the barberry to the pan, fry it with the rest of the sugar until it becomes shiny, and put it aside.
The third step:
The next phase, chop the remaining onion into small pieces and fry it in a pan with a little oil until it becomes light, then add the chicken meat and fry it a little. Then, we add the lemon juice along with the remaining saffron, pistachio slices, barberry and roasted carrots to the pan and fry the ingredients for another minute, then remove the pan from the heat. Now we go to prepare our rice.
The fourth step:
We soak the rice in water for 2 to 3 hours with a little salt, depending on its type, then we fill a suitable pot halfway with water and put it on high heat until the water boils. Next, add 1 teaspoon of salt to the water. We slowly add the soaked rice to the boiling water and wait for 7 to 10 until the rice grains are completely soft and their centers and kernels are a little hard. In this case, pour the rice into the colander and rinse with cold water.
The fifth step:
Now we put a suitable pot for cooking on a low heat and pour some oil into it. Next, for “tahdig,” we use sliced potatoes or lavash bread (kind of Iranian thin flat bread) according to our taste. Don’t forget to set aside some of the chicken and carrot mixture to decorate the Shirin polo and mix the rest with the drained rice and slowly pour it on the “Tahdig” and put the lid of the pot and let the rice brew slowly.
It takes about 45 minutes to an hour to brew rice. After Shirin polo is cooked, we mix it a little in the pot, then put it in a dish and use the remaining chicken, carrot and barberry to decorate it.
